Today I’m sharing one of my favorite easy-peasy recipes: Salmon on vegetable cous cous from the oven! Enjoy! xo

DSC03219Ingredients (for two):

2 salmon filets
250 g (9 ounces) carrots
1 bunch of spring onions
150 g cous cous (5.5 ounces)
1/2 teaspoon of cinnamon
1 teaspoon of spicy curry
1 lemon
1 bunch of parsley
200 ml (1 cup) vegetable broth

Plan for 20min working time and 15min in the oven.

  1. Pre-heat oven at 200°C / 392°F (top and bottom heating, not circulation)
  2. Peel and slice carrots
  3. Wash and cut spring onions
  4. Heat some olive oil in a pan, stir-fry onions and carrots for 3min, add salt and pepper
  5. Mix cous cous with cinnamon and curry and add to the pan (on low heat)
  6. Add hot vegetable broth and cover pan. Let it soak for 5min, add a bit more broth (don’t let it dry up too much)
  7. Grate about 1 tablespoon of lemon zest and cut the parsley
  8. Toss salmon filets in salt and pepper, then add the lemon zest and parsley on top
  9. Use a fork to loosen up the cous cous, then pour the mix onto the middle of two baking papers
  10. Add salmon on top of the cous cous. Slice the lemon and add slices on top
  11. Fold the baking papers like two candy bonbons, twist the ends tightly
  12. Bake in the lower third of the preheated oven for 15min
  13. Open packages at the table for the fully scented experience!
