This is one of my favorite quick lunch recipes, I make it all the time when I feel like something healthy but filling.
Ingredients (for two):
- Parsley (5 bunches or as much as you would use as a bowl of lettuce)
- Cherry tomatoes (2-3 handful)
- 1 lemon
- 1 cup of Bulgur
- White balsamic vinegar, olive oil, salt & pepper
First, boil up water with salt and some vegetable broth powder. When boiling, turn the heat to low and add Bulgur. Let it soak in the covered pot for 20 minutes.
Chop up the parsley (without the stems), but not too finely.
Cut cherry tomatoes into quarters
Rinse bulgur with cold water and mix with parsley and tomatoes
Squeeze lemon on top and add some olive oil, vinegar and pepper to taste. Mix well.
I hope you love this easy recipe as much as I do and give it a try. It’s also a great bring-to-work lunch, just keep bulgur separate and add the dressing just before.
Serve as small portions in glasses at parties! If you chop fine enough, guests can easily eat with a spoon. I did that for my birthday party and everyone loved it!
Also, you can mix it up with the ingredients to arrive at many many possible variations of this recipe:
- Parsley: Exchange for kale, spinach, butterhead lettuce
- Bulgur: Exchange for Quinoa
- Add: Spring onions, pumpkin seeds, meat…
