Hi people, it’s about time to continue filling this section of my blog with some of my favorite recipes. This one is a pasta-free, easy to do minced-beef lasagne with zucchini. While it sure is a bit healthier than your regular Italian favorite, I’m telling you it’s also such a crowd pleaser. I’ve cooked this multiple times for family-style dinners with guests, and even the boys love it. Hope you try it!


Ingredients (for 3-4 people):

1kg Zucchini (the big ones)
500g minced beef or chicken
1 big onion
1 garlic clove
1 can of tomato pieces
200g cream cheese, plus a bit of sour cream if you like
100ml milk
1 big spoon tomato paste
150g freshly grated parmesan cheese (I never buy the pre-grated one)
Olive oil
Fresh oregano, thyme, parsley
Salt, pepper, paprika spice


 STEP 1: The Zucchini

First, you slice the zucchini lengthwise, about 3mm thick. I like to use an automatic bread / salami slicing machine (so German), which is definitely much easier, but of course you can use a knife. Then, you pan-sear them in a little olive oil, salt and pepper. Spread out a few paper towels to park them until you layer them in the lasagne, and to take away the oil.

STEP 2: The Bolognese

Stir-fry the diced onion and garlic clove in a little oil until golden. Then, add the minced meat and stir on high heat. Add the tomato paste, the can of tomatoes, the herbs and spices. Mix everything. Take down the heat and let it simmer under a closed lid for about 10 minutes. Add the parsley last.

STEP 3: The Cream

The third part of the whole lasagna is a creamy white sauce made of cream cheese and parmesan. Mix the cream cheese with the milk first, adding lots of pepper and some salt, and some nutmeg if you like. Then, add about 1/3 of your grated cheese and mix.

STEP 4: Layering

Start by layering the bottom of your casserole dish with zucchini slices. Then, add a layer of beef, then white sauce, and so forth. Your supposed to end with a layer of beef, but as you see I had too many slices left so you can end with whatever you prefer, it works either way. Then, you top it all off with the rest of your grated parmesan cheese.

STEP 5: Baking

Bake the casserole in your pre-heated oven for 30 minutes on 200°C.
